Vegan Carrot Cake Loaf

This carrot cake loaf is fluffy, moist, and perfectly spiced with a luscious cream cheese frosting. Gluten-free and vegan.

For the Cake
- 66666667/100000000 cup all-purpose flour (or gluten-free blend)
- 1/4 cup brown sugar or coconut sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon EACH ginger and cardamom
- 2 tablespoons flax eggs (Note 1)
- 1/2 cup smooth almond butter
- 33333333/100000000 cup non-dairy milk
- 33333333/100000000 cup applesauce
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 cup shredded carrots
- 1/2 cup chopped walnuts
- 2 tablespoons unsweetened coconut flakes
- 2 tablespoons raisins (any color) For the Frosting
- Vegan Cream Cheese Frosting or Paleo Cream Cheese Frosting
Instructions
- Step 1: Preheat oven to 350 degrees Fahrenheit. Line a (8 in. x 4 in.) baking pan with parchment paper so that the paper flaps hang off the sides of the pan. Note: To use an (8 in. x 8 in.) pan, double the recipe.
- Step 2: In a medium bowl, add all of the dry ingredients and whisk together. In a separate large bowl, stir together the flax eggs, almond butter, milk, applesauce, maple syrup, and vanilla extract. Add the dry ingredients to the wet ingredients and stir until well combined. Fold in the shredded carrots, walnuts, coconut flakes, and raisins.
- Step 3: Pour the batter into the lined pan and smooth out the top. Bake for 26 to 28 minutes. Let the cakes cool for 10 minutes in the pan. Then remove them from the pan and continue cooling on a cooling rack.
- Step 4: While the cakes are cooling, make the cream cheese frosting of choice.
- Step 5: Use a spatula or back of a spoon to smooth the cream cheese frosting over the cooled loaf. Top with an optional sprinkle of walnuts.
- Serve: Slice and enjoy! Freezes well.
Recipe Notes
Note 1: To make a flax egg, combine 2 tablespoons flax meal + 5 tablespoons cold water. Let sit 5 to 10 minutes, or until thickened into a gel-like consistency.
