Hummingbird Cake with Cream Cheese Frosting

This hummingbird cake recipe is filled with pineapple, bananas, pecans, and nutmeg, all smothered in a luscious cream cheese frosting. Makes 3 (9-inch) layer cakes or 18 cupcakes. Vegan and gluten-free option.

For the Cake
- 2 1/4 cups all-purpose flour (or gluten-free blend)
- 1 cup + 2 tablespoons cane or coconut sugar
- 3 large eggs (or 3 flax eggs, see Note 1)
- 3/4 cup canned crushed pineapple with juice (Note 2)
- 3/4 cup ripe banana, well mashed
- 1/2 cup + 1 tablespoon grapeseed oil
- 6 tablespoons pecans, chopped
- 1 1/2 teaspoons cinnamon
- 1 1/2 teaspoons vanilla extract
- 3/4 teaspoon baking soda
- 1/4 heaping teaspoon ground nutmeg
- 1/4 heaping teaspoon salt For the Cream Cheese Frosting

Instructions
- Step 1: Preheat oven to 350 degrees Fahrenheit. Lightly grease 3 cake pans.
- Step 2: In a large bowl, combine the flour, sugar, baking soda, cinnamon, nutmeg, and salt.
- Step 3: Add the oil, egg, vanilla, mashed banana, and pineapple. Fold in the pecans. Stir just until the ingredients are combined.
- Step 4: Pour the batter into the prepared pans.
- Step 5: Bake for 22 to 25 minutes, or until a toothpick inserted into the center comes out clean. Let the pans cool on wire racks. Do not remove the cake from the pan until it has sufficiently cooled. For cupcakes, bake for 20 to 25 minutes.
- Step 6: Meanwhile, prepare your frosting of choice.
- Step 7: Spread the frosting over the cakes once the cakes have fully cooled. Sprinkle the top with extra pecans. Any extra frosting can be frozen.
- Serve: Slice and enjoy. This cake can also be sliced and individually frozen with good results.
Recipe Notes
Note 1: To make 1 flax eggs, combine 1 tablespoons flax meal + 1/2 cup of water in a small bowl. Stir and let sit for 10 minutes, or until it has thickened into a gel-like texture. Use in place of the eggs. Note 2: If you can't find canned crushed pineapple, try lightly blending 2 parts fresh pineapple and 1 part pineapple juice until it reaches a chunky texture.
