Burger and Hummus Bowl

These healthy burger and hummus bowls are easy, healthy, and perfect for a weeknight dinner. A warm burger patty of your choice with a dollop of hummus over crispy pan-fried sweet potatoes, greens, bell pepper, and avocado. Plant-based option.

Shopping List
- 2 burger patties of choice (such as turkey, salmon, or veggie burgers)
- 2 handfuls mixed greens
- 1 large sweet potato (any variety)
- 1 bell pepper, diced
- 1/2 avocado, sliced
- feta, to taste (optional)
- avocado oil, for frying
- hummus, to taste (store-bought or homemade)
- olive oil and lemon juice, to taste
- salt and pepper, to taste
Instructions
- Step 1: Cook the burger patties on the stovetop until cooked through to your liking.
- Step 2: Slice the sweet potato into thin 1/4-inch slices.
- Step 3: Heat a thin layer of avocado oil in a large skillet over medium-high heat. Once hot, add the potatoes in a single layer and sprinkle with salt. Fry the potatoes for about 2 minutes per side, or until lightly browned. Flip and cook another 1 to 2 minutes, or until the potatoes are fork-tender and crispy browned. Transfer the potatoes slices to a paper towel-lined plate.
- Serve: Build your bowl with the greens, warm potatoes, raw bell pepper, warm burger patty, and a dollop of hummus. Sprinkle with optional feta and drizzle with olive oil and lemon juice. Enjoy.
