Vegan Banana Pancakes

Warm and fluffy homemade vegan banana pancakes with fresh banana mashed right into the batter. Very easy. Freezes well for a quick weekday breakfast.

Shopping List
- 1 cup all-purpose flour (or gluten-free blend)
- 66666667/100000000 cup non-dairy milk
- 1 medium-sized ripe banana, mashed
- 2 tablespoons coconut sugar (or cane sugar)
- 2 teaspoons baking powder
- 1/2 heaping teaspoon cinnamon
- pinch of salt
- vegan butter or coconut oil, for frying
Instructions
- Step 1: Stir together the dry ingredients: flour, sugar, baking powder, cinnamon, and salt in a bowl.
- Step 2: In a separate bowl, stir the milk and mashed banana. Add the wet ingredients to the dry and stir until just combined. You'll have some nice little banana pieces in there. Note: Add in some chocolate chips or chopped walnuts now if you like.
- Step 3: Heat a nonstick pan over medium heat. Melt a dab of vegan butter or coconut oil in the pan and swirl to coat the pan.
- Step 4: Using a ¼ cup measure, scoop the batter onto the warm skillet. Cook for 2-ish minutes, or until little air pockets appear. Flip and cook on the other side for 1 to 2 minutes.
- Serve: Enjoy with your favorite toppings.
