For the Cake
- 2 tablespoons almond flour
- 2 tablespoon pumpkin puree
- 1 tablespoon all purpose flour (or gluten-free blend)
- 1 tablespoon smooth almond butter
- 1 tablespoon coconut sugar
- 1/4 teaspoon baking powder
- 1/2 teaspoon pumpkin pie spice (optional) For Topping (optional)
- chocolate chips, whipped cream, or ice cream
Instructions
- Step 1: Add all ingredients to a small ramekin or wide microwaveable mug. Stir until smooth and well combined (be sure to get into the corners as well).
- Step 2: Microwave the ramekin for 60 seconds, depending on your microwave wattage. Top with any optional chocolate chips and let the cake sit for 1 minute.
- Serve: Grab a spoon and enjoy straight from the ramekin or mug with a scoop of optional ice cream or whipped cream.
