Pasta with Tomato Sauce and Ricotta

Tender pasta in a simple tomato sauce and topped with a creamy dollop of ricotta to mix into every bite. 3 ingredients, easy, and so satisfying.

Instructions
- Step 1: If making the homemade tomato sauce option, prepare it now.
- Step 2: Bring a pot of generously salted water to a boil over high heat. Add the pasta, a tiny bit of oil, and cook until the pasta is al dente. Set aside a mug full of the starchy pasta water before draining.
- Step 3: Drain the pasta and place it back in the pot. Stir in the sauce and 2 spoonfuls of the ricotta. Add in a splash of the reserved pasta water (we use about 4 spoonfuls) until your desired consistency is reached. Taste and season with salt, pepper flakes, and a drizzle of olive oil.
- Serve: Divide into bowls and top each with a generous dollop of ricotta and optional basil for garnish.

Note 1: We like to use non-dairy Kite Hill Ricotta or homemade Almond Ricotta.
