Pasta with Tomato Sauce and Ricotta

Shopping List
  • 8 ounces pasta of choice
  • 1 cup good quality tomato sauce (such as Rao's or homemade)
  • ricotta cheese, to taste (dairy or non-dairy, Note 1)
  • olive oil, salt, and pepper flakes, to taste
  • basil, for topping (optional)

Instructions
  1. Step 1: If making the homemade tomato sauce option, prepare it now.
  2. Step 2: Bring a pot of generously salted water to a boil over high heat. Add the pasta, a tiny bit of oil, and cook until the pasta is al dente. Set aside a mug full of the starchy pasta water before draining.
  3. Step 3: Drain the pasta and place it back in the pot. Stir in the sauce and 2 spoonfuls of the ricotta. Add in a splash of the reserved pasta water (we use about 4 spoonfuls) until your desired consistency is reached. Taste and season with salt, pepper flakes, and a drizzle of olive oil.
  4. Serve: Divide into bowls and top each with a generous dollop of ricotta and optional basil for garnish.

Recipe Notes

Note 1: We like to use non-dairy Kite Hill Ricotta or homemade Almond Ricotta.
