Nonna's Easy Tomato Sauce

A very simple tomato sauce recipe from a Sicilian grandmother's kitchen. This is not a thick red-style sauce but rather, it's a light and refreshing tomato sauce using just fresh tomatoes, olive oil, and basil.

- 2 1/2 cups cherry tomatoes, quartered (350 grams)
- 1/2 cup fresh whole basil leaves
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon salt
- red pepper flakes, to taste
Instructions
- Step 1: Heat a large frying pan over medium heat. Add the tomatoes and cook until softened, stirring frequently and squishing the tomatoes down with a fork. This should take about 10 to 15 minutes. If the tomatoes are browning too quickly, lower the heat.
- Step 2: Once soft and sauce-like, turn off the heat. Add the olive oil, pepper flakes, salt, and fresh basil leaves. The residual heat of the sauce will naturally wilt the leaves.
- Serve: Use this sauce as-is in pasta dishes like Pasta with Fried Eggplants or try blending it if you prefer a smoother sauce. For a pizza sauce, add 1 tablespoon of tomato paste and blend until smooth.
