Paleo Cream Cheese Frosting

Homemade vegan cream cheese frosting without the cream cheese or powdered sugar! This thick and tangy frosting is made from cashews, lemon juice, yogurt, and vanilla. This recipe will make enough for frosting 12 cupcakes or 1 (8-inch) layer cake(s).

- 1 cup raw cashews (not roasted)
- 1/4 cup water
- 1/4 cup non-dairy plain yogurt
- 1/4 cup coconut oil, melted
- 2 tablespoons maple syrup
- 2 tablespoons lemon juice
- 2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Step 1: Combine all ingredients in a high-powdered blender and blend until very smooth, scraping down the sides between intervals. There is no need to soak the cashews beforehand if using a high-powdered blender.
- Serve: Transfer the frosting to an airtight container and refrigerate until firm, at least 30 minutes. Try it on Hummingbird Cake, Pumpkin Bread.
