Paleo Hummingbird Cake

This best Hummingbird Cake recipe made with almond flour, eggs, banana, pineapple, pecans, and a luscious cashew cream cheese frosting. Grain-free and paleo. Makes 2 (9-inch) layer cakes or 1 (9-inch x 13-inch) sheet cake.

For the Cakes
- 3 cups + 6 tablespoons almond flour
- 1 cup + 2 tablespoons coconut sugar
- 9 large eggs
- 1/2 cup + 1 tablespoon coconut flour
- 1/2 cup + 1 tablespoon canned crushed pineapple, with juice (Note 4)
- 5 tablespoons ripe banana, mashed
- 4 1/2 tablespoons grapeseed oil
- 1/2 cup pecans, chopped
- 1 1/2 teaspoons cinnamon
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon apple vinegar or lemon juice
- 1 teaspoon + 1/8 teaspoon baking soda
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt For the Frosting
- Paleo Cream Cheese Frosting, to taste
Instructions
- Step 1: Preheat oven to 350 degrees Fahrenheit. Lightly grease the cake pans and line with parchment paper strips for easier removal.
- Step 2: In a large bowl, combine the flour, sugar, baking soda, cinnamon, nutmeg, and salt. Add the oil, eggs, vanilla, mashed banana, and pineapple. Fold in the pecans. Stir just until the ingredients are combined. Pour the batter into the prepared pans.
- Step 3: Bake for 22 to 25 minutes, or until a toothpick inserted into the center comes out clean. Let the pans cool on wire racks. Do not remove the cake from the pan until it has fully cooled.
- Step 4: Meanwhile, prepare the frosting.
- Step 5: Spread the frosting over the cakes once the cakes have fully cooled. Sprinkle the top with extra pecans. We like keeping this cake a single-layer since it's easier to handle.
- Serve: Slice and enjoy. Freezes well.
Recipe Notes
Note 1: If you can't find canned crushed pineapple, try lightly blending 2 parts fresh pineapple and 1 part pineapple juice until it reaches a chunky texture.
