Mango Stuffed Falafels

Upgrade store-bought falafel mix with juicy roasted mango pieces and fresh herbs. It's an easy hack and adds a pop of fresh flavor in every bite.

Shopping List
- 1 (12-16 ounce) box gluten-free falafel mix
- 1 large ripe mango, peeled & diced
- 1 handful herbs, chopped (such as cilantro or dill)
- 1/2 tablespoon agave nectar
- high heat cooking oil, for frying
Instructions
- Step 1: Preheat the oven to 410 degrees Fahrenheit.
- Step 2: Toss the mango pieces (you should have about 1 heaping cup) with the agave and spread over a lined baking sheet. Roast for 10 minutes, or until very soft and slightly caramelized. Set aside.
- Step 3: Prepare the falafel mix according to package directions. We recommend letting the batter sit at least 30 minutes to thicken.
- Step 4: Gently stir in the roasted mango and herbs. Use your hands to form the chilled falafels into small balls or patties (about 2 tablespoons each). If pan-frying, we recommend making small patties. Note: If your batter seems too wet, add some chickpea flour.
- Step 5: Frying method (preferred): Fill a skillet with a thin layer of high-heat cooking oil over medium-high heat. Fry the falafels in batches, until golden on both sides, about 2 to 5 minutes. Cool on a paper towel lined plate. Baking method: Preheat the oven to 375 degrees Fahrenehit. Place the falafels on an oiled and lined baking sheet and pat them down slightly into small patties. Spray with oil and bake for 25 to 30 minutes.
