How to Make Cauliflower Rice

The best method to make tasty cauliflower rice that's perfectly fluffy! Use this low-carb rice alternative in almost any dish that calls for cooked white or brown rice.

- 1 medium head cauliflower (or 1 pound(s) fresh or frozen riced cauliflower)
Instructions
- Step 1: Preheat the oven to 400 degrees Fahrenheit.
- Step 2: Remove the external leaves and the bottom of the hard stalk on the cauliflower. Note: If using the pre-riced cauliflower, skip ahead to Step 4.
- Step 3: Food Processor Method: Cut the cauliflower into small, 2-inch chunks. Place 1 handful of cauliflower into a food processor fitted with an s-blade (overcrowding will result in a "rice" that isn't evenly-sized). Pulse until the cauliflower is the size of a grain of rice. Transfer to a baking sheet. Repeat this process with all remaining cauliflower. Grating Method: Cut the cauliflower into large chunks. Use the cheese-grating side of a box-grater to grate the cauliflower into "rice". Transfer to a baking sheet.
- Step 4: Spread the rice evenly over a lined baking sheet. If using frozen cauliflower rice, defrost it in the refrigerator or microwave so that you can break up any frozen clumps. Bake for 8 to 10 minutes, until the cauliflower on the edges of the pan begin to turn lightly golden. It should not be wet at all.
- Serve: Enjoy with stir fries and burrito bowls!
