Dolma Stir Fry (Unstuffed Grape Leaves)

The flavor of delicious stuffed grape leaves (dolmas), transformed into an easy 15-minute stir fry! This low-carb dolma stir fry is made with rice or riced cauliflower, canned grape leaves, tomato, and mint for a flavor-packed vegetable side dish.

Shopping List
- 2 cups cooked brown rice (or 3 cups fresh or frozen riced cauliflower)
- 1 cup jarred grape leaves, rinsed & chopped into bite-sizes pieces
- 1/2 brown onion, chopped
- 1/4 cup olive oil
- 3 tablespoons tomato paste
- 1 small tomato, diced
- 1 tablespoon dried mint
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- lemon juice, to taste (for serving)
Instructions
- Step 1: If using the riced cauliflower option, preheat the oven to 410°F. Spread the riced cauliflower evenly over a large baking sheet and roast for 10 minutes. Once cooked, set aside. Note: If using frozen cauliflower, let it thaw or microwave it slightly so that no large frozen chunks remain. If using the brown rice option, skip this step.
- Step 2: Heat the olive oil in a wide, deep-sided frying pan over medium-high heat. When the oil is hot, add the onion. Cook, stirring often, about 3 to 5 minutes or until the onion has softened.
- Step 3: Add the diced tomato and cook for another 30 seconds.
- Step 4: Add in all remaining ingredients: cooked rice, spices, tomato paste, and grape leaves. Continue cooking for a 2 to 3 minutes, stirring often. It will be ready when everything is well combined and fragrant.
- Serve: Enjoy warm with a squeeze of lemon juice on top. This is especially great alongside Sweet Potato Falafels or Spiced Ground Lamb.
