Healthy Turkey Burger Dinner

An easy weeknight meal when all you want is a warm, comforting meal to sit down to. The sweet potatoes and vegetables roast in the oven while you quickly cook the burger patty on the stovetop. Plant-based option.

Shopping List
- 2 turkey burgers or veggie burgers (store-bought or homemade)
- 8 ounces trimmed green beans (or 1 sliced bell pepper)
- 1 large sweet potato
- 1/2 avocado, sliced
- 1 1/2 tablespoons olive oil
- your favorite condiments, to taste
- salt and pepper, to taste
Instructions
- Step 1: Preheat the oven to 420°F. Slice the sweet potato into wedges and toss with 1 tablespoon of the olive oil, and season with salt and pepper. Separately, toss the green beans or bell pepper with the remaining 1 tablespoon of olive oil, and season with salt and pepper.
- Step 2: Preheat the oven to 420°F. Add the potato wedges and roast for 12 minutes. After 12 minutes, stir the potato wedges and turn up the heat to 450°F. Add in the seasoned green beans or bell pepper slices and continue to cook the everything for another 8 to 10 minutes, or until the potatoes are fork tender.
- Step 3: While the vegetables roast, cook the burger patties on a frying pan until cooked through on both sides.
- Serve: Divide each plate evenly with the vegetables, potato wedges, burger patties, and avocado slices. Top with your favorite condiments and enjoy.
