Dojo Salad with Carrot-Ginger Dressing

A quick combination of greens, beets, carrots, and avocado with a generous drizzle of carrot ginger dressing. Turn this salad into a meal with the addition of grilled chicken, salmon, or your favorite veggie burger. Inspired by the (now closed) Dojo restaurant of Manhattan.

Shopping List
- 1 cup spring mix
- 1/4 cup raw beet, grated
- 1/4 cup shredded carrots
- 1/4 avocado, sliced or diced
- 1 serving Carrot Ginger Salad Dressing
Instructions
- Step 1: Place the lettuce in a bowl and top it with the beets, carrots, and avocado. Drizzle generously with the Carrot Ginger dressing.
- Serve: Grab a fork and enjoy. This is also delicious with a scoop of warm brown rice or cauliflower rice.
