1-Minute Mug Pancake

A fluffy and delicious single-serve pancake ready in one minute! Just mix, microwave, add toppings, and enjoy. A wide 6-inch microwaveable bowl or ramekin works best here, but a wide mug will also work.

Shopping List
  • 2 tablespoons all-purpose flour (or gluten-free blend)
  • 2 tablespoons applesauce (or mashed banana)
  • 1/2 tablespoon cane or coconut sugar
  • 1/2 tablespoon non-dairy milk
  • 1/2 tablespoon smooth nut butter (such as peanut butter or almond butter)
  • 1 teaspoon melted coconut oil or plant-based butter
  • 1/16 teaspoon EACH baking powder and baking soda
  • 1/16 teaspoon apple cider vinegar
  • berries, chocolate chips, butter, and/or maple syrup (for topping)

Instructions
  1. Step 1: Stir together all ingredients, except the toppings, in a wide 6-inch microwaveable bowl or ramekin until smooth. Note: Add the toppings after microwaving, or it will not cook properly.
  2. Step 2: Microwave the pancake batter for 60 seconds, or until cooked and fluffy.
  3. Serve: Add your desired toppings, a spoon, and enjoy.
