Quinoa Tabbouleh

Tabbouleh is a refreshing and healthy Middle Eastern appetizer made with plenty of fresh herbs, vegetables, olive oil, and lemon juice. Rather than traditional bulgur, this version is made with easy-to-find quinoa.

Shopping List
- 1/2 cup cooked quinoa, cooled
- 3/4 cup parsley leaves, chopped (about 1 bunch)
- 1/4 cup fresh mint, chopped (Note 1)
- 1 roma tomato, seeded and finely diced
- 2 scallions, sliced (white and light green parts only)
- 2 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons lemon juice
- 1/8 teaspoon salt and black pepper
Instructions
- Step 1: Finely chop the parsley and mint. Place the herbs in a mixing bowl and add the cooled quinoa, tomato, scallions, olive oil, lemon juice, salt, and pepper.
- Serve: Toss everything together and enjoy chilled or at room temperature. This is also great in Tuna Tabbouleh Wraps.
Recipe Notes
Note 1: No mint? Try substituting with an equal amount of cilantro.
