Ice Cream Cake Bread (3 Ingredients)

Easy Ice Cream Bread! 3-Ingredient fluffy-sweet bread made with just ice cream, flour, and baking powder. Can easily be made vegan and gluten-free.

- 1 pint ice cream, semi-melted (can use dairy-free, see Note 1)
- 1 cup all-purpose flour (or gluten-free blend)
- 1 1/2 teaspoons baking powder
- 1/4 cup of chocolate chips, sprinkles, and/or chopped nuts (optional)
- 1 (8 in. x 4 in.) loaf pan (Note 2)
Instructions
- Step 1: Preheat the oven to 350 degrees Fahrenheit. Line the pan(s) with parchment paper.
- Step 2: Once the ice-cream is quite melted, scoop it out into a food processor. Add the flour and baking powder. Blend until smooth. Stir in any optional add-ins (leaving some for topping). Note: Hand mixing will not work for this recipe.
- Step 3: Pour the batter evenly into the pan(s). Bake for 30 to 35 minutes for the big loaf pan or 22 to 25 minutes for 2 mini loaf pans. To make cupcakes, cook for approximately 25 minutes. Baking times will vary slightly depending on the brand of ice cream.
- Serve: Cool before eating. Enjoy.
Recipe Notes
Note 1: Low calorie ice cream does not work well here, as it tends to fall apart after baking. Choose an ice cream that does not have many mix-in flavors and/or textures. Simple flavors like vanilla, chocolate, chocolate chip, mint chip, strawberry, and peanut butter work especially well. Note 2: Every 1 (8 in. x 4 in.) loaf pan may be substituted with 2 mini loaf pans. Cupcake tins may also be used.
