Hummus and Toasted Pita Salad

An easy, refreshing Mediterranean salad recipe made with crisp cucumber, tomatoes, hummus, and toasted flatbread for a tasty spin on classic Fattoush salad. Recipe inspired by the lovely Amy Wilichowski.

For the Salad
- 1 english cucumber, diced
- 2 large tomatoes, diced
- 1 large piece lavash-style flatbread (Note 1)
- 1 avocado, diced
- 1/2 cup feta cheese (dairy or non-dairy)
- 1/2 cup hummus (store-bought or homemade)
- 1/4 red onion, thinly sliced For the Dressing
- extra-virgin olive oil, to taste (plus more for toasting lavash)
- lemon juice, to taste
- salt and pepper, to taste
Instructions
- Step 1: Preheat the oven to 350 degrees Fahrenheit. Brush the lavash or pita on both sides with olive oil until slick but not dripping (about 1 tablespoon). Place the lavash on a baking sheet bake until lightly golden and crisp like a cracker, about 5 to 7 minutes. Keep an eye on it to avoid burning. Set aside.
- Step 2: Combine the diced cucumber, tomato, avocado, feta cheese, and red onion. Season with salt and pepper. Divide the salad into bowls and break off bite-sized pieces of the toasted bread on top of each.
- Serve: Add a dollop of hummus into each salad bowl and then drizzle with olive oil and a squeeze of lemon. Enjoy.
Recipe Notes
Note 1: Lavash is a soft, easily foldable flat bread that is usually sold in large sheets. If lavash cannot be found, substitute with opened pita bread (or use pre-made pita chips and skip the toasting process altogether).
