Vanilla Mug Cake (Egg-Free)

A fluffy vanilla cake that's made with simple ingredients and is ready in minutes. No eggs needed makes this vegan too. It's the perfect single-serving vanilla mug cake - made even better with your favorite toppings.

- 3 tablespoons non-dairy milk
- 2 1/2 tablespoons all-purpose flour (or gluten-free blend)
- 2 tablespoons cane sugar or coconut sugar
- 1 tablespoon coconut flour
- 1 tablespoon grapeseed oil, melted coconut oil, or melted plant-based butter (Note 1)
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon baking powder Toppings (Optional)
- sprinkles, chocolate chips, or fresh berries
Instructions
- Step 1: Add all ingredients to a small ramekin (we use this one) or wide microwaveable mug. Stir until smooth and well combined (be sure to get into the corners as well). If using sprinkles, add a few into the batter.
- Step 2: Microwave the ramekin for 60 to 80 seconds, depending on your microwave wattage. Top with any optional toppings and let the cake sit for 1 minute.
- Serve: Grab a spoon and enjoy straight from the ramekin or mug.
Recipe Notes
Note 1: Unsweetened applesauce may be substituted for the oil as a lighter alternative. Keep in mind that the cake will not be as moist.
