Vegan Mushroom Bacon

Easy shiitake mushroom bacon made with only 4 ingredients! Smoky, savory, chewy, and perfect for tucking into sandwiches and salads.

Shopping List
- 4 ounces shiitake mushrooms, sliced 1/4 inch thick
- 1 1/2 tablespoons olive oil
- 1 tablespoon tamari (or coconut aminos, such as Big Tree Farms)
- 1/4 teaspoon smoked paprika
- 1/8 teaspoon liquid smoke (optional)
Instructions
- Step 1: Preheat oven to 350 degrees Fahrenheit. Stir together the sliced mushrooms, olive oil, tamari or aminos, paprika, and optional smoke in a bowl.
- Step 2: Spread the mushrooms in a single layer over a lined baking sheet. Bake for 20 minutes, stirring after 10 minutes. They should be crisp-browned, but not totally blackened.
- Serve: Enjoy in sandwiches, Vegan Cobb Salad, or even piled over BLT Pizza.
