Tofu Taco Meat

A delicious high-protein vegan ground meat alternative made with tofu, mushrooms, soy sauce, and tomato paste roasted until crispy. Great in tacos and stir-fries. Different flavor ideas below.

Original Base
- 1 (15 ounce) block extra-firm tofu
- 1 cup finely chopped mushrooms (any variety)
- 2 tablespoons low-sodium tamari
- 1 tablespoon tomato paste
- 1 teaspoon olive oil
- 1/2 teaspoon EACH garlic powder and onion powder Asian-Inspired
- 1 tablespoon hoisin sauce Italian-Inspired
- 1 tablespoon nutritional yeast + 1 teaspoon oregano Mexican-Inspired
- 2 teaspoons spicy taco seasoning (adjust to taste)
Instructions
- Step 1: Preheat the oven to 425 degrees Fahrenheit.
- Step 2: Drain the tofu and pat it dry. Crumble the tofu with your hands or a spatula into a bowl. Add the chopped mushrooms, tamari, tomato paste, olive oil, garlic powder, and onion powder. If using one of the flavor variations, add in those ingredients to the base mixture. Stir everything together until well combined.
- Step 3: Transfer to a large baking sheet. Spread out the pieces as mush as possible to ensure even browning. Roast the tofu for 20 to 25 minutes, stirring every 10 minutes. It will brown quickly, but those crispy pieces are exactly what we're looking for.
- Serve: Enjoy. This is delicious as a vegan meat alternative in Taco Salads, sandwiches, and stir fries such as Eggplant and Basil Stir Fry. A 4-serving portion will be equivalent to about 1 pound of cooked ground meat when substituted in a recipe.
