Soy-Marinated Steak

This is one of the juiciest and most flavorful marinated steaks we've ever made. The orange juice tenderizes the protein, while fish sauce adds umami. It's a winner, and any leftover marinade is delicious when cooked down into a savory dipping sauce.

  • 1 pound flank steak or skirt steak
  • salt and pepper, to taste Marinade
  • 1/4 cup orange juice
  • 1/4 cup low-sodium tamari
  • 1/4 cup cilantro, chopped
  • 4 garlic cloves, minced
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon scallions, chopped (white and light green parts only)
  • 1/2 tablespoon fish sauce
  • 1/2 teaspoon chili flakes

Instructions
  1. Step 1: Mix together all marinade ingredients in a small bowl. Place the steak and the marinade in a glass container, so that the steak is coated in the marinade. Marinate the steak for 1 hour, up to overnight.
  2. Step 2: Remove the steak from the marinade (do not discard the marinade). Heat a large cast-iron pan, grill, or grill-pan to medium-high heat. Once sizzling hot, cook the steak for approximately 5 to 7 minutes per side. 5 minutes for medium-rare, 6 minutes for medium, and 7 for medium-well.
  3. Step 3: Heat the reserved marinade in a small saucepan and bring to a boil. Simmer the sauce for 2 minutes, or until slightly reduced.
  4. Serve: Slice the steak against the grains and serve with the reduced sauce on the side as a flavorful dipping sauce. Enjoy.
