Sautéed Celery

Ever buy a big bunch of celery for a recipe, only to use 1 or 2 stalks - and then not know what to do with the rest of it? This recipe is for you. Sauté celery until it's fork-tender, and then finish it off with some garlic and a pinch of nutmeg. The whole dish takes under 20 minutes and gives new life to celery.

Shopping List
- 1 small bunch of celery
- 1/2 cup water or vegetable broth
- 2 tablespoons olive oil
- 1 garlic clove, chopped
- 1/8 teaspoon ground nutmeg
- salt and red pepper flakes, to taste
Instructions
- Step 1: Slice the celery stalks into 1" inch pieces (slice on the bias for a pretty presentation). Set aside any celery leaves for topping later.
- Step 2: Heat the olive oil in a wide skillet over medium-high heat. Add the cut celery and cook for 5 minutes, or until it is beginning to color. Stir occasionally during this time.
- Step 3: Add the water or broth to the skillet (if using plain water, be sure to salt it generously). Cover the pan with a lid and lower the heat to medium. Simmer the celery in the liquid for 5 minutes.
- Step 4: After 5 minutes, remove the lid and add the garlic to the pan. Cook for another 3 to 5 minutes, or until all the liquid has cooked off.
- Step 5: Stir in the nutmeg and some pepper. Taste and adjust seasonings as needed. Remove from the heat and top with any reserved celery leaves.
- Serve: Drizzle with oil and enjoy. This is also nice with some traditional or vegan parmesan sprinkled on top.
