Sautéed Bell Pepper and Celery

The easiest side-dish made from tender sautéed bell peppers, celery, garlic, and olive oil. It's the perfect compliment to chicken or fish and is ready in under 15 minutes.

Shopping List
- 4 large celery stalks
- 2 large bell peppers, any color (or 3 small)
- 2 garlic cloves, chopped
- 2 tablespoons olive oil or grass-fed butter
- salt and pepper, to taste
Instructions
- Step 1: Remove the stem and inner seeds from the bell peppers. Dice the celery and bell peppers into tiny, bite-sized pieces. You should have about 2 cups each of celery and bell pepper.
- Step 2: Heat the olive oil in a skillet over medium-high heat. Add the garlic and cook for 30 seconds. Add the diced vegetables, salt, and pepper. Cook for 7 to 9 minutes, or until the vegetables are very tender.
- Serve: Enjoy warm with extra pepper on top. This is great alongside Dill-Butter Baked Salmon.
