Watermelon salad with Feta and Watercress! Refreshing and so easy.

For the Salad
- 2 cups seedless watermelon, cubed
- 1 large handful watercress (or arugula)
- 3/4 cup feta, crumbled or cubed (dairy or non-dairy)
- 1/2 cup fresh mint leaves
- white or black sesame seeds (optional, for sprinkling) For the Vinaigrette
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lime juice
- salt, to taste
Instructions
- Step 1: Whisk together the vinaigrette ingredients. Set aside.
- Step 2: Roughly chop the watercress and add to a bowl with the watermelon, feta, and mint. Add the vinaigrette and toss to coat.
- Serve: Divide onto plates, sprinkle with sesame seeds, and enjoy immediately.
