Watermelon Salad with Chili Lime Pepitas

Juicy watermelon, creamy avocado, and spicy pumpkin seeds, all dressed with a fresh honey-lime vinaigrette. The chili lime pepitas are ready in minutes and are downright addictive as a snack on their own.

For the Salad
- 2 handfuls raw spinach (about 2 ounces)
- 1 very heaping cup seedless watermelon, cubed (about 7.5 ounces)
- 1 avocado, diced For the Chili Lime Pepitas
- 1/4 cup raw pepitas / pumpkin seeds
- 1/2 tablespoon lime juice
- 1/2 teaspoon extra-virgin olive oil
- 1/8 teaspoon cayenne pepper (or more, to taste)
- 1/8 teaspoon salt For the Vinaigrette
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lime juice
- 1 teaspoon honey (or agave syrup)
- 1/4 teaspoon salt
- cayenne pepper, to taste
Instructions
- Step 1: First, let's make the Chili Lime Pepitas. Heat the 1/2 teaspoon of olive oil in a skillet over medium heat. Add the pepitas and cook until they begin to pop and get a hint of extra color, about 1 to 3 minutes. Add the lime juice, cayenne, and salt. Stir until the juice has evaporated, about 30 more seconds. Set aside to cool.
- Step 2: Whisk together all of the vinaigrette ingredients in a small bowl. Set aside.
- Step 3: In a mixing bowl, combine the spinach, watermelon, and avocado. Toss with the vinaigrette.
- Serve: Top the salad with the Chili-Lime Pepitas. Enjoy.
