Watermelon Mint Salad

The most refreshing easy summertime salad made with juicy watermelon, arugula, salty feta, and plenty of fresh mint. The homemade mint and lime salad dressing brightens and melds all the flavors together. Enjoy.

Salad
- 1 1/2 ounces arugula (about 2 handfuls )
- 1 1/2 cups watermelon, roughly diced
- 2 ounces feta cheese (or plant-based feta alternative), crumbled
- 30 whole mint leaves Mint Dressing
- 4 tablespoons extra-virgin olive oil
- 2 tablespoons lime juice
- 2 tablespoons fresh mint
- 1 tablespoon white wine vinegar or champagne vinegar
- 1 tablespoon honey
- salt and pepper, to taste
Instructions
- Step 1: Whisk all dressing ingredients together with a fork or immersion stick blender (preferred method) until smooth. If using a stick blender, try blending the ingredients in a wide-mouthed mason jar for great results. Refrigerate until ready to use.
- Step 2: Combine all of the salad ingredients in a large bowl. Toss with the mint dressing, to taste. Any leftover dressing will last up to 1 week refrigerated.
- Serve: Enjoy immediately for best results. This is delicious served alongside chicken and/or cooked farro.
