Vodka Sauce Sausage Pasta

Pasta tossed with creamy vodka sauce, spicy sausage, and fresh spinach. This 4-ingredient weeknight dinner takes only 20 minutes to prepare thanks to easy store-bought vodka sauce.

Shopping List
- 8 ounces rigatoni or penne pasta (can use gluten-free)
- 2 spicy Italian sausages (plant-based, chicken, or pork)
- 2 handfuls fresh spinach
- 3/4 cup prepared vodka sauce (we use this one)
- salt and red pepper flakes, to taste
- grated parmesan cheese, to taste (optional)
Instructions
- Step 1: Bring a large pot of generously salt water to a boil. Add the pasta and cook until al dente according to package directions. Before draining, reserve a mugful of the starchy pasta water.
- Step 2: While the pasta boils, heat a large frying pan over medium-high heat. Tear or slice the sausages into bite-sized pieces and add them to the hot pan. Add olive oil if needed to prevent sticking. Cook the sausages, stirring often, until browned on all sides. About 3 to 5 minutes.
- Step 3: Add the spinach to the pan and cook until wilted. Turn off the heat.
- Step 4: Add the drained pasta to the pan with the sausages and pour in the vodka sauce (add more or less sauce to your taste preference). Stir to combine. Add in a few splashes of the reserved pasta water to loosen the sauce as needed. Add a generous pinch of red pepper flakes for more heat.
- Serve: Transfer the pasta into bowl and top with an optional sprinkle of parmesan. Enjoy.
