Vegan Cauliflower Mac and Cheese

Baked “Mac” and Cheese made with tender cauliflower smothered in a creamy vegan cheese sauce. It's filling, naturally lower in carbs, and super comforting. Perfect for satisfying those macaroni and cheese cravings without the processed ingredients or dairy.

Vegan Cheese Sauce
- 1 1/2 ounces orange sweet potato, diced into 1 inch pieces
- 1/4 cup raw cashews, soaked in warm water for 30 minutes
- 2 tablespoons extra virgin olive oil
- 2 tablespoons onion, diced (about .65 ounces)
- 2 tablespoons nutritional yeast
- 1 teaspoon corn starch or tapioca starch
- 1 teaspoon cold water
- 3/4 teaspoon sea salt
- 1/2 garlic clove, chopped
- 1/4 teaspoon smoked paprika The Rest
- 16 ounces cauliflower florets (about 1 medium cauliflower head)
Instructions
- Step 1: Place 1 cup of water in a small saucepan. Add the diced sweet potato and onion and bring it to a low boil over medium-high heat. Cover the pan and simmer for 10 minutes, or until the sweet potatoes are fork-tender. Once cooked, drain the vegetables and reserve the cooking liquid (it will be used in the next step).
- Step 2: Drain and rinse the soaked cashews. Add the cashews to a food processor or blender along with the olive oil, nutritional yeast, salt, garlic, and paprika. Add in 6 tablespoons of the reserved cooking liquid from the sweet potatoes. Blend everything until smooth, scraping down the sides as needed.
- Step 3: Stir together the starch and cold water in a small bowl to form a slurry. Add this slurry to the processor and continue blending for another 30 seconds, or until the sauce is super creamy. Set aside.
- Step 4: Chop the cauliflower florets into bite-sized pieces. Steam the florets until fork-tender, about 4 to 6 minutes. Toss the warm cauliflower with the cheese sauce until well coated. Add water, a few tablespoons at a time, if needed to loosen the sauce.
- Step 5: Transfer the cauliflower to a small casserole dish and bake at 375°F for 15 to 20 minutes.
- Serve: Transfer the baked cauliflower and cheese to bowls. Top with an optional sprinkle of pumpkin seeds.
