Tzatziki Nourish Bowls

An easy and healthy Greek-inspired meal prep bowl loaded up with roasted cauliflower, cooked grains, feta, leafy greens, and a big dollop of creamy tzatziki to mix into everything. Pre-cooked grains and protein to make this weekday meal ready in no time.

Shopping List
- 1/2 large head cauliflower (about 1 pound)
- 3 servings cooked protein of choice (Note 1)
- 3 handfuls greens (such as arugula or spring mix)
- 1 1/2 cups cooked grains of choice (such as brown rice or quinoa)
- 3 servings tzatziki dip (store-bought or homemade)
- crumbled feta cheese, to taste
- olive oil and lemon juice, to taste
- lavash flatbread, for serving (optional)
Instructions
- Step 1: Preheat the oven to 410 degrees Fahrenheit. Cut the cauliflower into roughly 1½ inch pieces (like the size of a thumb). The pieces will shrink while cooking, so avoid cutting them too small. Both the florets and the center pieces can be used.
- Step 2: Toss the cauliflower in a drizzle of olive oil and season with salt and pepper. Spread on a baking sheet and cook for 20 to 25 minutes, flipping halfway.
- Step 3: Meanwhile, toss the greens with a little olive oil and a pinch of salt. Divide into bowls. Top with the warm cooked grains.
- Step 4: Cook (or reheat) the protein and divide it into the bowls. Top with the roasted cauliflower, generous dollops of tzatziki, and sprinkles of crumbled feta.
- Serve: Drizzle with olive oil and lemon juice. Enjoy.
Recipe Notes
Note 1: Try topping with warm falafel, salmon, or chicken. Bean burger patties or seafood burgers are also great (dice before serving).
