Shopping List
  • 2 pounds 93% lean ground turkey
  • 1 (28 ounce) can crushed fire-roasted tomatoes
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 2 yellow onions, diced
  • 3 to 4 cups salted vegetable broth
  • 2 celery stalks, diced
  • 2 carrots, diced
  • 1 jalapeño, seeds removed and diced
  • 3 garlic cloves, minced
  • 1 1/2 tablespoons chili powder
  • 1 tablespoon tomato paste
  • 1 tablespoon tabasco sauce (double for spicy)
  • 1 tablespoon olive oil
  • 1 teaspoon EACH dried oregano, cumin, and coriander
  • 1 teaspoon salt
  • 1/4 cup cilantro, chopped

Instructions
  1. Step 1: Dice the onions, celery, carrots, garlic, and jalapeño into small pieces.
  2. Step 2: Heat the 1 tablespoon of olive oil in a large pot over medium-high heat. Add the diced onions, celery, garlic, and jalapeño. Cook, stirring occasionally for 5 minutes.
  3. Step 3: Add the ground turkey, breaking it into small pieces with the side of a spatula, until it is no longer pink inside. Strain the released liquid and place the meat mixture back into the pot.
  4. Step 4: Stir in the tomato paste, tabasco sauce, chili powder, oregano, cumin, and coriander. Cook until fragrant, about 2 more minutes.
  5. Step 5: Pour in the canned tomatoes and broth. Stir and bring to a boil over medium-high heat.
  6. Step 6: Once boiling, reduce the heat to medium-low and simmer uncovered for 20 minutes. Add the drained beans and simmer for another 5 minutes.
  7. Serve: Stir in the cilantro and ladle the chili into bowls. Top with your favorite fixings.
