Turkey Chili

- 2 pounds 93% lean ground turkey
- 1 (28 ounce) can crushed fire-roasted tomatoes
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can kidney beans, drained and rinsed
- 2 yellow onions, diced
- 3 to 4 cups salted vegetable broth
- 2 celery stalks, diced
- 2 carrots, diced
- 1 jalapeño, seeds removed and diced
- 3 garlic cloves, minced
- 1 1/2 tablespoons chili powder
- 1 tablespoon tomato paste
- 1 tablespoon tabasco sauce (double for spicy)
- 1 tablespoon olive oil
- 1 teaspoon EACH dried oregano, cumin, and coriander
- 1 teaspoon salt
- 1/4 cup cilantro, chopped
Instructions
- Step 1: Dice the onions, celery, carrots, garlic, and jalapeño into small pieces.
- Step 2: Heat the 1 tablespoon of olive oil in a large pot over medium-high heat. Add the diced onions, celery, garlic, and jalapeño. Cook, stirring occasionally for 5 minutes.
- Step 3: Add the ground turkey, breaking it into small pieces with the side of a spatula, until it is no longer pink inside. Strain the released liquid and place the meat mixture back into the pot.
- Step 4: Stir in the tomato paste, tabasco sauce, chili powder, oregano, cumin, and coriander. Cook until fragrant, about 2 more minutes.
- Step 5: Pour in the canned tomatoes and broth. Stir and bring to a boil over medium-high heat.
- Step 6: Once boiling, reduce the heat to medium-low and simmer uncovered for 20 minutes. Add the drained beans and simmer for another 5 minutes.
- Serve: Stir in the cilantro and ladle the chili into bowls. Top with your favorite fixings.
