Turkey and Cheese Unwich

A tasty sandwich wrap with no bread needed! Filled with sliced turkey, provolone, avocado, and spicy banana peppers. Just roll it up and enjoy your "unwich".

Shopping List
- 6 wide romaine or iceberg lettuce leaves (Note 1)
- 3 ounces sliced turkey or chicken
- 2 slices provolone cheese (dairy or non-dairy)
- 1/2 avocado, sliced
- mayonnaise, to taste
- sliced banana peppers or pickled jalapeño, to taste
- salt and pepper, to taste
Instructions
- Step 1: Remove any hard bottom stalks from the romaine (if using), you'll want to use mostly the top soft leaves for easy rolling and less crunch. Lay a large piece of parchment paper on a cutting board. Overlap the leaves to make a square or rectangular shape (3 on top, 3 on the bottom per unwich).
- Step 2: Start by laying the sliced turkey horizontally down the middle of the leaves, slightly closer to the side closest towards you (like a burrito). Top the turkey with the cheese, mayonnaise, avocado, peppers, salt, and pepper.
- Step 3: Using the parchment paper below, tightly wrap up the lettuce leaves like a burrito, folding the ends in as you roll. Avoid tucking the parchment paper into the ends with the lettuce (no one wants to eat paper). Set it seam-side facing down.
- Serve: Slice the roll in half, open it up, and peel away the parchment as you enjoy your unwich. The parchment helps hold everything together, so don't remove the whole thing at once.

Note 1: Any bread substitute or wrap can be used here. We like using the romaine option listed, egg wraps, or cauliflower sandwich thins. All can be found in stores like Trader Joe's and Costco.
