Tomato and Cucumber Salad

A no-fuss tomato and cucumber side salad dressed with lemon, olive oil, and dried oregano. Try serving this alongside dolmas, hummus, and pita.

- 2 roma tomatoes, diced (about 1 cup)
- 1 cup english or persian cucumber, diced
- 1/4 cup red onion, finely diced (optional)
- 2 tablespoons parsley, chopped
- 2 tablespoons olive oil
- 1/2 tablespoon lemon juice
- 1/4 teaspoon dried oregano
- 1/8 teaspoon salt and pepper, to taste
Instructions
- Step 1: Dice the tomatoes, cucumbers, and optional onion.
- Step 2: Combine the tomatoes, cucumber, optional onion, parsley, olive oil, lemon juice, and oregano in a bowl. Season to taste with salt and pepper.
- Serve: Enjoy immediately for best results. The longer this salad sits, the more liquid it will naturally release.
