Shopping List
- 1 (14 ounce) block extra firm tofu
- 1 handful baby spinach (or other leafy green)
- 1 bell pepper, diced
- 1 plant-based sausage, sliced (optional)
- 1/2 cup asparagus, trimmed and chopped
- 1/4 onion, diced
- 3 tablespoons shredded plant-based cheese
- 2 tablespoons olive oil
- 1/2 teaspoon EACH turmeric, garlic powder, onion powder
- salt and pepper, to taste
Instructions
- Step 1: Heat the olive oil in a wide frying pan over medium-high heat. Add the bell pepper, asparagus, onion, and optional sausage. Cook for 5 minutes, stirring occasionally.
- Step 2: Meanwhile, drain the liquid from the tofu block and pat dry. After the vegetables have cooked for 5 minutes, crumble the tofu into the pan with your hands or a spatula. Add in the turmeric, garlic powder, onion powder, salt, and pepper to the tofu. Cook for 5 minutes.
- Step 3: Add the spinach and cheese and stir until wilted.
- Serve: Enjoy! This is also delicious with a of roasted potatoes.
