Sweet Potato and Chicken Sausage Bowls

Crispy pan-cooked sweet potatoes, sausage, veggies, and avocado all in one big macro bowl! 1-Pan and ready in 20 minutes.

Shopping List
- 2 chicken sausages (or plant-based sausages), sliced
- 1 small sweet potato (any color variety)
- 1 zucchini, halved and sliced
- 1/2 red bell pepper, diced
- 1/2 avocado, sliced
- 2 handfuls spring mix
- 2 tablespoons avocado oil (divided)
- salt and pepper, to taste
- olive oil and lemon juice, for serving
Instructions
- Step 1: Slice the sweet potato into thin 1/4-inch slices.
- Step 2: Heat 1.5 tablespoons of the avocado oil in a large skillet over medium-high heat. Once hot, add the potatoes in a single layer and sprinkle with salt. Fry the potatoes for about 2 minutes per side, or until lightly browned. Flip and cook about 2 more minutes, or until the potatoes are fork-tender and crispy. Exact cooking times will depend on the thickness.
- Step 3: Transfer the potatoes slices to a paper towel-lined plate. In the same hot pan, pour in the remaining 1/2 tablespoon of oil. Add the sliced zucchini and bell pepper. Season with salt and pepper and cook over medium-high heat for 4 to 5 minutes, or until tender.
- Step 4: Push the vegetables to the side of the pan and add sliced sausages. Cook for 2 to 4 more minutes, or until the sausage is lightly browned. Add the potatoes back to the pan and toss everything together until warmed.
- Serve: Build each bowl with a handful of greens, the potatoes, sausage, zucchini, bell pepper, and sliced avocado. Drizzle with olive oil and lemon juice. Enjoy.
