Strawberry Cashew Cheesecake Parfait

A no-bake cashew cheesecake parfait with layers of cookie crumbs, strawberries, and a creamy cheesecake filling. Plant-based and easy.

Shopping List
- 1 1/2 cups raw cashews, soaked for 4 hours, then drained and rinsed (Note 1)
- 3/4 cup full fat coconut milk (Note 2)
- 33333333/100000000 cup agave syrup
- 3 tablespoons lemon juice
- 1 tablespoon coconut oil, melted
- 1/2 tablespoon vanilla extract
- 1/4 teaspoon salt
- 1 3/4 cups cookie crumbs (such as graham cracker, chocolate, or peanut cookies)
- 6 tablespoons strawberry jam (optional)
- chopped strawberries, to taste
Instructions
- Step 1: In a high-powered blender, blend the drained cashews, coconut milk, agave, lemon juice, coconut oil, vanilla and salt until super creamy.
- Step 2: Crush the cookies into crumbs with a food processor or rolling pin (or just your hands).
- Step 3: Add a layer of crushed cookies to the bottom of each parfait glass (reserve a little for topping later). Top the graham crackers with a layer of the cheesecake, followed by a dollop of optional jam and another tiny sprinkle of cookie crumbs. Top with fresh fruit and refrigerate at least 1 hour.
- Serve: Grab a spoon and enjoy.
Recipe Notes
Note 1: Soak the cashews in a large bowl with lukewarm water for 4 hours, then drain and rinse the cashews well. Alternatively, pour boiling water over the cashews and soak uncovered for 30 minutes. Drain and rinse. Note 2: We recommend blending the coconut milk from the can or carton before measuring to ensure that you're getting an evenly distributed amount of cream to water ratio. Different brands will have different results. We recommend using the carton variety of Arroy-D Coconut Cream (works like full-fat coconut milk).
