Strawberry and Feta Salad with Mint Vinaigrette

This delicious arugula salad recipe has juicy strawberries, cucumber, feta, toasted almonds, and a creamy mint dressing! So refreshing.

For the Salad
- 6 handfuls arugula
- 2 cups strawberries, hulled and quartered
- 2 cups cucumber, halved and sliced
- 1 cup toasted sliced almonds (Note 1)
- 1/2 cup feta cheese (dairy or non-dairy) For the Mint Dressing
- 4 tablespoons extra virgin olive oil
- 2 tablespoons lime juice
- 2 tablespoon mint leaves
- 1 tablespoon champagne vinegar
- 1 tablespoon honey (or agave)
Instructions
- Step 1: Blend the mint dressing ingredients together with a stick blender (we like this one) or small standing blender, until it is creamy and only small mint specks remain. You could also whisk the dressing by hand, but be sure to chop the mint into very small pieces. Refrigerate.
- Step 2: Combine the arugula, strawberries, cucumber, almonds, and feta in a mixing bowl. Add a splash of the mint dressing to the salad and gently toss to combine.
- Serve: Divide the salad onto plates and enjoy with extra dressing on the side.
Recipe Notes
Note 1: If your almonds are un-toasted, toast them in a dry frying pan over medium heat for a few minutes. They will be ready when they are golden and fragrant. Shake the pan often to avoid burning.
