Strawberry and Apple Spinach Salad

This easy Strawberry and Apple Spinach Salad is the perfect summer meets fall salad recipe. Juicy strawberries, apple slices, spinach, tangy cheese and pecans, all drizzled with a simple balsamic vinaigrette.

For the Salad
- 4 handfuls baby spinach (about 3 ounces)
- 5 large strawberries, hulled and sliced
- 1/2 large tart apple (such as honeycrisp or fuji)
- 1/2 cup pecans
- 1/4 cup crumbled goat cheese or blue cheese (adjust to taste)
- 1/4 cup red onion, thinly sliced (optional) For the Balsamic Vinaigrette
- 2 1/2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon dijon mustard
- 1 teaspoon honey
- 1 garlic clove, chopped
- 1/4 teaspoon dried thyme (optional)
- salt and pepper, to taste
Instructions
- Step 1: Stir together the vinaigrette ingredients in small bowl or jar until smooth. Set aside.
- Step 2: Thinly slice the apples, or cut them into matchsticks. Set aside.
- Step 3: Heat a frying pan over medium heat and add the pecans. Toast the nuts for several minutes until they are warm and fragrant. Shake the pan often to avoid burning.
- Step 4: Add the spinach, sliced strawberries, sliced apple, crumbled cheese, optional onions and toasted pecans to a large mixing and toss together. Add the vinaigrette, to taste.
- Serve: Divide into bowls and enjoy. This is great alongside burgers like Dad's Favorite Beyond Burgers.
