Sriracha and Turkey Stir-Fry

Sriracha and Turkey Stir Fry! A flavor explosion of tender cabbage, ground turkey, and a spicy umami sauce smothering every bite. Made with sriracha, sesame oil, tamari, fish sauce, and the secret ingredient - ketchup. The sweetness from the ketchup brings the whole dish together and helps the sauce cling to the stir fry just right.

For the Turkey
- 1 pound 93% lean ground turkey
- 4 scallions, chopped (white and light green parts only)
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons ketchup
- 2 tablespoons low-sodium tamari
- 1 1/2 tablespoons sriracha (use 1 tablespoon for mild)
- 1 tablespoon olive oil
- 1 tablespoon sesame oil
- 2 teaspoons fish sauce
- 2 teaspoons fresh ginger, minced
- 1/4 cup sesame seeds (optional, for topping) For the Cabbage
- 1/2 head green cabbage, diced
- 1/2 cup water
- 2 garlic cloves, minced
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 1/4 teaspoon salt
Instructions
- Step 1: Let's start with the cabbage. Heat the 1 tablespoon(s) of olive oil in a frying pan over medium-high heat. Add the garlic and cook for 30 seconds, or until golden. Add the cabbage, 1/4 teaspoon salt, and 1 tablespoon(s) sesame oil. Cook for 2 to 3 minutes.
- Step 2: Add the 1/2 cup of water to the cabbage and cook for another 10 minutes uncovered, stirring occasionally. The cabbage will be ready when it is tender and all the water has cooked off. Transfer the cabbage to a plate.
- Step 3: In the same pan where the cabbage was, add 1 tablespoon(s) of olive oil. Add the ginger and ground turkey, using the side of the spatula to break the turkey into small pieces as it cooks. Cook the meat until it is cooked through, about 5 to 7 minutes.
- Step 4: Stir in the remaining 2 tablespoons of ketchup, 2 tablespoons of tamari, sriracha, 1 tablespoon sesame oil, and 2 teaspoons fish sauce into the turkey. Cook for another minute, then stir in the cooked cabbage, cilantro, and scallions. Stir everything together.
- Serve: Grab a bowl, maybe some rice, and a big scoop of your stir fry. Sprinkle with optional sesame seeds.
