Split Pea Purée

Ultra creamy and tender puréed split peas that make a simple and delicious side dish full of protein and fiber.

Shopping List
- 4 cups water
- 1 cup dried green split peas
- 1/4 cup extra virgin olive oil
- salt and pepper, to taste
Instructions
- Step 1: Inspect the split peas to remove any small stones or debris. Rinse well.
- Step 2: Place the split peas and water in a large pot over medium-high heat. Bring to a boil and then lower the heat to medium, partially covered with a lid. Cook until the peas are very tender, about 30 to 45 minutes. Stir often and keep an eye on the pan to avoid the pot from boiling over. If it does begin to boil over, simply remove the lid, stir several times, and reduce the heat. If the peas ever look like they are beginning to stick to the bottom of the pan, add a bit more water.
- Step 3: Lightly drain the peas and reserve the cooking liquid. Transfer the cooked split peas to a food processor. An immersion blender may also be used. Add the olive oil and puree the peas until they are super creamy, adding the reserved cooking liquid as needed to loosen to your preferred consistency (I use almost all of it). Season with salt and pepper.
- Serve: Dollop the purée into bowls and top with an optional extra drizzle of olive oil.
