Spirulina Chia Pudding

For the Pudding
- 1/2 cup non-dairy milk
- 1/2 cup non-dairy plain yogurt
- 2 tablespoons chia seeds
- 1 tablespoon maple syrup, coconut sugar, or date sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon spirulina (we use this one) For Topping (Optional)
- goji berries, raspberries, cacao nibs, brazil nut, and/or coconut flakes
Instructions
- Step 1: Stir together the chia seeds and milk in a bowl. Let it sit for 10 minutes to gel. Stir. Not thickening? See Note 1 below.
- Step 2: Stir in the yogurt, maple syrup or sugar, vanilla extract, and spirulina until well combined and light green. Refrigerate for at least 1 hour or overnight.
- Serve: Enjoy chilled as is, or (highly recommended) top it off with the topping ideas listed.
Recipe Notes
Note 1: Not thickening? That probably means your chia seeds are no longer fresh (don't worry, it happens). Just buy some new chia seeds and it should work.
