Spinach in Puff Pastry

Spinach, ham, and melty cheese tucked into layers of puff pastry and baked until golden and crispy. Everyone loves this easy classic Italian dish (pasta sfoglia ripiena).

- 2 sheets frozen puff pastry, thawed
- 1 1/2 (16 ounce) bags frozen whole leaf spinach (Note 1)
- 5 ounces mozzarella cheese, diced
- 4 ounces deli-sliced ham (optional for vegetarian)
- 2 tablespoons olive oil, divided
Instructions
- Step 1: Preheat the oven to 400 degrees Fahrenheit.
- Step 2: Defrost the spinach in a frying pan or microwave. Place the thawed spinach in a fine mesh strainer and press out as much liquid as possible from the spinach (this will keep the puff pastry crispy). Measure out 2.5 packed cups of pressed spinach. Toss the spinach with 1 tablespoon of the olive oil.
- Step 3: Line a large baking dish or oven-proof pan with parchment paper. Unroll the thawed puff pastry and place 1 sheet in the dish. Scatter the spinach all over the pastry sheet, leaving a little border on all sides. Top with the sliced ham and diced cheese. Place the other puff pastry sheet over the top. Use your fingers to tuck in the sides of the pastry together, like a pie crust.
- Step 4: Brush the remaining 1 tablespoon of olive oil over the top of the pastry and poke with a fork in several areas. Bake for 30 minutes, or until crisp and golden brown.
- Serve: Slice and enjoy immediately.
Recipe Notes
Note 1: This should make 2.5 cups of packed defrosted spinach (measured after pressing out as much water as possible). Boiled and chopped cooked swiss chard may also be used.
