Southwest Turkey Scramble

Easy taco-seasoned ground turkey and scrambled eggs mixed with black beans and tender bell pepper. Perfect for topping with sour cream and avocado!

For the Scramble
- 8 ounces 93% lean ground turkey (or vegetarian substitute)
- 4 eggs
- 1 bell pepper, diced (any color)
- 1 cup black beans
- 1 tablespoon taco-seasoning (store-bought or homemade)
- 2 tablespoons butter (dairy or non-dairy)
- shredded cheese, to taste (optional) For Topping
- dairy-free sour cream, salsa, and/or avocado
Instructions
- Step 1: Crack the eggs into a bowl and whisk well. Set aside.
- Step 2: Heat the half of the butter in a frying pan over medium-high heat. Add the diced bell pepper and cook for 2 to 3 minutes, or until lightly browned.
- Step 3: Add the ground turkey to the pan and cook until it is no longer pink, about 5 minutes. Use the side of a spatula to help break the meat into small pieces as it cooks.
- Step 4: Once cooked, drain the excess liquid and put the meat mixture back in the pan. Stir in the taco seasoning and 1/4 cup of water. Simmer until the liquid has cooked off, about 1 minute.
- Step 5: Push the turkey mix to one side of the pan. Add the remaining 1 tablespoon of butter in the empty side of the pan. Once melted, pour the whisked eggs over the butter. Scramble the eggs.
- Step 6: Add the beans and scramble the eggs, beans, and turkey mix all together. If adding cheese, do so now.
- Serve: Plate the scramble and top with a dollop of sour cream and/or avocado. Enjoy.
