Smoked Salmon and Arugula Salad

Fresh greens topped with smoked salmon, avocado, cucumber, radish, and a simple lemon vinaigrette with dollops of soft cheese. If you love a lox bagel, you'll really enjoy this easy salad recipe. Serve with crackers or cream cheese slathered toast for a full meal.

For the Salad
- 2 ounces arugula or spring mix (about 2 large handfuls)
- 4 ounces smoked salmon
- 1 avocado, sliced
- 1 cup cucumber, thinly sliced
- 3/4 cup radishes, thinly sliced (about 3 whole)
- 1/4 cup boursin dairy-free cheese or non-dairy cream cheese
- 1/2 roma tomato, sliced (optional) For the Vinaigrette
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon dijon mustard
- salt and pepper, to taste
Instructions
- Step 1: Stir together all of the vinaigrette ingredients in a small bowl or jar. Set aside.
- Step 2: Combine the greens, avocado, cucumber, and radish slices in a mixing bowl. Toss with some of the vinaigrette.
- Serve: Divide the salad onto plates and top each with some smoked salmon and dollops of the cheese. Serve with extra vinaigrette on the side.
