Single-Serving Apple Pie

These healthy single-serving apple pies are a dream. Sliced apples are covered with an easy almond flour crust and then baked until the apples are juicy-tender and the crust is golden brown. It's hard to believe they're naturally grain-free, refined sugar-free, and take only minutes to put together. I like to prepare these apple pies in small ramekins, but the recipe can also be scaled up to accommodate a large pie pan.

Crust
- 1/4 cup blanched almond flour
- 1 tablespoon plant-based butter, melted
- 1 teaspoon maple syrup
- 1/4 teaspoon vanilla extract
- 1/8 teaspoon cinnamon
- 1/8 teaspoon salt Filling
- 1 small apple, peeled and sliced
- 1/2 tablespoon sugar or coconut sugar
- 1 teaspoon lemon juice (use half if using a very tart apple)
- 1/2 teaspoon corn starch
- 1/4 teaspoon cinnamon
- 1/8 teaspoon ground nutmeg
Instructions
- Step 1: Preheat the oven to 375. Set aside 1 (4-inch) ramekin(s) (we use these ones).
- Step 2: Stir together all of the filling ingredients in a small bowl until the apple slices are evenly coated in the mixture. Transfer the apple filling to the ramekin(s).
- Step 3: Stir together all of the crust ingredients in a small bowl until a crumbly dough is formed. Use your hands to roll the crust into 1 ball(s) and then flatten it into a flat pancake shape, wide enough to cover the apple filling. Place the crust over the apple filling, patching in any gaps as needed (it doesn't need to be perfect).
- Step 4: Bake the apple pie in the ramekin(s) for 30 minutes, or until golden brown.
- Serve: Enjoy these warm apple pies straight out of the ramekin. They're delicious with a scoop of ice cream on top.
