Simple Herb Vinaigrette

Enjoy this simple vinaigrette either as a salad dressing, roasting sauce, or as a marinade. It's delicious on leafy salads, roasted salmon, chicken, or vegetables. Keep in mind that this vinaigrette is quite tart on its own, but will mellow out when served alongside your dish of choice. The dried oregano packs both taste and health, as the herb has been shown in some studies to be naturally rich in antioxidants and anti-inflammatory nutrients.

Shopping List
- 1/4 cup olive oil (use grapeseed oil if using this for high-heat roasting)
- 2 tablespoons fresh parsley, finely chopped
- 1 1/2 tablespoons lemon juice (Note 1)
- 1/2 tablespoon honey
- 1/2 tablespoon dijon mustard
- 1 teaspoon dried oregano
- salt and pepper, to taste
Instructions
- Step 1: Stir together all vinaigrette ingredients in a bowl until smooth. You can also emulsify the ingredients together with a stick blender.
