This Shrimp Salsa is an easy and impressive addition to any party or dinner table. If you love shrimp cocktail and pico de gallo, this is the recipe for you. Recipe adapted from Danny Trejo's Trejo's Tacos Cookbook.

Shopping List
  • 12 ounces large pre-cooked shrimp (Note 1)
  • 1/2 medium white or red onion, finely diced
  • 2 vine-on tomatoes, cored and diced
  • 2 jalapeños, halved with seeds and ribs removed
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

Instructions
  1. Step 1: Chop the cooked shrimp into bite-sized pieces. Combine it in a mixing bowl with the chopped onion, tomatoes, jalapeños, cilantro, lime juice, olive oil, and salt. Taste and adjust seasonings as needed.
  2. Serve: Enjoy with plenty of tortilla chips.

Recipe Notes

Note 1: Choose a pre-cooked shrimp that smells fresh and not fishy. Can't find any good pre-cooked shrimp? Season raw shrimp with some salt and then sauté over medium-high heat in a little olive oil for about 3 minutes total, or until opaque. Remove from the pan, let cool, and chop into bite-sized pieces.
