Sheet Pan Smoked Sausage, Apple, and Cabbage Dinner

A healthy Sheet Pan Sausage dinner that's savory with a hint of sweet — and so easy! Roasted cabbage, smoked sausage, potato, apple wedges, and rosemary with a drizzle of olive oil and honey.

Shopping List
- 1/2 large head green cabbage
- 12 ounces smoked chicken sausage (Note 1)
- 12 ounces red potatoes
- 1 apple (we used gala)
- 2 tablespoons avocado oil
- 1 tablespoon dried or fresh rosemary
- olive oil and honey, for drizzling
- parsley (optional, for topping)
Instructions
- Step 1: Preheat the oven to 420 degrees Fahrenheit.
- Step 2: Remove the stem from the cabbage and dice the cabbage into large 1 to 2 inch pieces. Core the apple and slice each apple into about 10 wedges. Then, slice the potatoes about 1/2 inch thick. Finally, slice the sausage on the bias about 1/2 inch thick.
- Step 2: Spread the chopped cabbage, apple, potatoes, and sausages over 2 large baking sheets. Toss with the avocado oil and rosemary. Season with salt and pepper.
- Step 3: Roast for 20 minutes, stirring halfway through. It will be ready when the potatoes are fork tender.
- Serve: Drizzle the sheet pans with a little olive oil and honey. Stir everything together and divide onto plates. Enjoy!
Recipe Notes
Note 1: We like to use Trader Joe's Smoked Apple and Chardonnay Chicken Sausage here. A spicier andouille or kielbasa sausage would also work well.
