Sautéed Baby Bok Choy

The best way to cook baby bok choy for a healthy, tender, and super easy side dish! We keep the seasonings super simple here, so feel free to add garlic, ginger, or coconut aminos for even more flavor.

- 12 ounces baby bok choy
- 1 tablespoon avocado oil
- toasted sesame oil, to taste
- sesame seeds, to taste
- salt and pepper flakes, to taste
Instructions
- Step 1: Chop the bok choy lengthwise into quarters. Rinse and dry the the bok choy well, making sure to remove any dirt hidden in the inner leaves. Keep any leaves that might fall off.
- Step 2: Heat the oil in a large skillet over medium-high heat. Add the bok choy in a single layer, with their flat cut sides facing down. It should sizzle loudly on contact with the pan. Sprinkle with salt.
- Step 3: Sear the bok choy for 3 to 4 minutes, or until nicely browned. Turn the bok choy over so that it can sear another few minutes on the other side.
- Step 4: Once the bok choy looks tender and browned, add in a few spoonfuls of water and let the water cook off.
- Serve: Add a drizzle of sesame oil, season with salt and pepper, and sprinkle with sesame seeds. Enjoy.
