Salted Chocolate Almond Crunch

Melt-in-your-mouth salted chocolate squares filled with crunchy layers of toasted almonds in every bite. Only 5 simple ingredients and such a delicious treat.

- 1 1/2 cups sliced almonds
- 1 cup chocolate chips (dairy or non-dairy)
- 2 tablespoons butter (dairy or non-dairy)
- 30 grams honey (or agave syrup)
- 1/2 teaspoon salt (cut in half for less salted)
Instructions
- Step 1: Line 1 small, un-greased bread loaf pan(s) with 2 thin strips of parchment paper so that the parchment flaps hang from all sides. Set aside.
- Step 2: Preheat the oven to 325°F. Spread the sliced almonds on a baking sheet and bake for 3 to 4 minutes, or until lightly golden. Keep an eye on it to avoid burning. Transfer the toasted almonds to a bowl.
- Step 3: Melt together the chocolate chips, butter, and honey or agave in a microwaveable bowl or double boiler. If using a microwave, heat the chocolate in 20 to 30 second increments to avoid burning (mine only too about 30 seconds). Stir the mixture together until smooth and pourable.
- Step 4: Sprinkle the salt into the chocolate and stir again. Add in the toasted almonds and gently fold the mixture together with a rubber spatula until the almonds are all coated in the chocolate (try not to crush the almonds too much when stirring). Pour the chocolate almonds evenly into the lined bread pan and gently press it flat with the spatula.
- Step 5: Refrigerate the chocolate almonds for at least 1 hour, or until hardened. Once firm, use the parchment flaps to lift the chocolate block out of the pan. Place on a cutting board and slice into squares. Refrigerate or freeze until ready to eat.
- Serve: Set on the counter a few minutes before eating to soften. Enjoy.
